Shably Seongsu Seoul Forest Shabu and Rolls Review
A weekend review of Shably Seongsu Seoul Forest near Ttukseom, with reservation notes, unlimited rice paper rolls, shabu-shabu, kimchi kalguksu, and porridge.
Hi, this is Ijjingne. I visited Seongsu-dong for the first time in a while. Weekend Seongsu was busy as expected, with so many people that it felt crowded. I wanted a healthier meal, so I reserved and visited Shably Seongsu Seoul Forest, a rice paper roll and shabu-shabu place that always seems to have a wait.

It is closer to Ttukseom Station than Seongsu Station, in the alley with many Seongsu restaurants. The hours are 11:30 to 22:00, with last order at 21:00. Reservations are available through Naver Reservation and Tableing. I visited after booking through Tableing.

The entrance already looked pretty and matched the Shably name. I had a Saturday 18:00 reservation and arrived around 17:40. There was already one waiting team. The staff explained we would likely enter around 18:00, and by that time the wait had grown to seven teams.

It is also a place many celebrities have visited.

We were guided to a window seat, and the table was already set. There were plates for eating rice paper rolls comfortably and deeper bowls for the porridge and kalguksu.

Shably set for two Drinks
We ordered the Shably set. For the shabu meat, we chose brisket. For the shabu broth, we chose tomato and the basic broth. If you need more meat, Shably Seongsu Seoul Forest offers 100 g of meat as a service through a Naver receipt review, so keep that in mind if you want to add meat.

At the end of the restaurant, there was pumpkin porridge that is good before the meal.

For after the meal, sikhye and plum tea were prepared. I had a bowl of pumpkin porridge before eating and finished with sikhye afterward, which felt clean and nice.

The Shably set came out almost immediately after ordering. The rice paper roll vegetables and shabu-shabu looked very generous.

The rice paper rolls were unlimited, so I ate plenty of raw vegetables for the first time in a while. The shabu-shabu vegetables and meat were also tasty when wrapped together in the rice paper.

When the shabu-shabu starts boiling, the staff comes over, wets the rice paper, puts meat on it, and shows you how to eat it.

The method Shably taught was to add all four sauces. Eating it the way they explained really was the best. My favorites were the chili sauce and peanut sauce.

Rice paper, sauces, shabu broth, and hot water for rice paper were set up so you could take what you needed whenever you needed it, which was convenient.

After adding the ingredients nicely, rolling them, and eating for a while, I started to get full. When the shabu-shabu had gone down somewhat, we asked the staff to prepare kalguksu. There were basic and kimchi options. Since we had the shabu in basic broth, I wanted spicy kimchi kalguksu and ordered that.

The staff adjusted the shabu vegetables and broth, then added the kimchi kalguksu. It was spicy, slightly sweet, and tasty. The noodles were very chewy.

It was not over yet because porridge was still left. The porridge was genuinely delicious. Shably is truly good at porridge. The seasoning was just right, and even though I felt completely full, I kept eating it.

This is a must-eat item. The flavor comes out especially after eating the kimchi kalguksu, so I strongly recommend trying the kimchi kalguksu too.

Shably Seongsu Seoul Forest was a place where I could refill on vegetables after a long time. It is a restaurant I think I will crave again. The wait was long, but it felt worth it. If you visit at peak time, you may wait a lot, so making a reservation is strongly recommended.
