Hospital Cafeteria Tray: Barley Rice and Gangdoenjang
A Korean hospital cafeteria meal setup featuring gangdoenjang with barley rice, buckwheat jeonbyeong, egg jangjorim, cabbage salad, skewered fish cake soup, and beef seaweed soup.
Hello, this is Ijjingne's nutrition diary. Today I prepared a gangdoenjang and barley rice meal, one of my favorite menus for grown-up tastes.
Gangdoenjang and barley rice, buckwheat jeonbyeong, egg jangjorim, cabbage salad, skewered fish cake soup, and beef brisket seaweed soup. Ward meals: 30 trays. Staff meals: 180 trays.

Once plated on the tray, it made such a pretty meal. I think gangdoenjang with barley rice, skewered fish cake soup, and buckwheat jeonbyeong is one of the best combinations. It was a very popular day.

First, the gangdoenjang. It tasted even better because it was full of ingredients like tofu, zucchini, mushrooms, and potatoes.

When it was finished, it was simmered down into a thicker, richer texture. Our kitchen manager seasoned it well so it was not too salty.

For the fish cake, we used both skewered fish cake and assorted fish cake. We ordered 180 skewers to match the number of people and prepared 4kg of assorted fish cake. There was plenty because a lot of radish went in too.

The skewers were boiled until cooked and then set aside separately. If we left them in the soup container, they would disappear. We plated one each with crown daisy.

Nicely cooked fish cake with a little crown daisy. I really like crown daisy in fish cake soup and udon, so I almost always add it when making fish cake soup. It goes out plated separately so people who dislike it can skip it. I feel like many people enjoy the aroma of crown daisy, but maybe that is just me.

For the buckwheat jeonbyeong, we use Anycook mini buckwheat jeonbyeong. For postpartum mothers, only the meat version goes out, while staff receive a mix of meat and kimchi versions. The Anycook mini buckwheat jeonbyeong fits the tray perfectly, and it tastes good too. This is already my third time using it, and the preference level has been good.

We fried them carefully so they would not stick together, cooled them, then plated the meat and kimchi versions separately, one each.

This cabbage and chive salad goes out often. It is a very good side dish. I could not add lettuce when lettuce was expensive, but it tastes even better with lettuce mixed in. Since lettuce prices have come down, I plan to add it next time.
